Sour Apples, to Cook so as to Keep Their Shape.
Some writer upon this subject says: I always cook them in quarters; putting them into boiling water, with sugar to taste; being sure to put on water enough at first, so as not to stir or disturb them until done; then pour into a dish and you have a nice sauce to eat with cream as peaches. I like them better.
Remarks. —There is no doubt but what the boiling water sets, or toughens, the surface, and prevents them from coming to pieces; but, it strikes me that I, at least, would like peaches and cream best,
