The Queen of Puddings, With Bread-Crumbs. —Bread-crumbs, 1 pt.; sweet milk, 1 qt.; the yolks of 4 eggs, well beaten; butter, the size of an egg; sugar, 1 cup; the grated rind of 1 lemon. Mix and bake till done, but not watery; then, having beaten the whites with a cup of white sugar (powdered always for this) to a froth, replace for a few moments to brown. If needed for a dinner-party, it improves the appearance by spreading on the top of the pudding, when taken from the oven, a layer of preserves or jelly and then the Sugar and whites of the eggs over the jelly; set it back in the oven and bake slightly, to be served when cold; cut in slices it is very beautiful.
