Vienna Yeast, or the Best Yeast Known. —A writer, in describing how the compressed, or Vienna, yeast is made, first says: " Vienna bread is the best in the world. It owes its superiority to the yeast used, which is prepared in the following manner: Indian corn, barley and rye (all sprouting) are powdered and mixed, and then macerated in water at a temperature of from 149 to 167° Fah.
