flour. Make a hole in the middle with the stirring spoon; pour in half a pint of the soft yeast, first thoroughly stirring it from the bottom, then mixing with the flour; add tepid water, stirring constantly, until a smooth, stiff batter is formed, which stir and beat vigorously with the spoon for at least five minutes after it is perfectly mixed. Cover lightly, and set in a warm place until thoroughly
light, almost foaming; but be sure not to delay kneading until it begins to subside.
Kneading. —Sift the flour, say 6 qts., in a pan, make a hole in the middle, pour in the sponge; add a pinch of salt, and, dexterously mingling the flour with the soft sponge by the hand, gradually add a quart of warm milk or warm water, quickly incorporating the whole into a smooth, even mass.
