Dr. Chase's Receipt Book 1899
The recepies found in this section are reprinted from Dr. Chase's Receipt book originally printed in 1899. The recipes are for Historical documentaion only I have no doubt that many of these recipes are still in use today. One thing that I noticed was when it comes to oven tempature only hot or moderate type descriptions were made. In our modern world we simply set the temp and the timer and wait. In the 1800's a wood or coal was used to fire the oven I would asume a constant vigalence was needed to produce a cake or any other dish. The absencs of a refrierator- freezer to keep items fresh and cold would have been a great hardship. My hat is off to the cooks. Please read and look through the recipes and imagine life in the 1800's
